One way to use those extra tomatoes from your fall harvest is by doing fresh salsas. Done in 5 minutes this salsa can accompany rice, vegetables or just to enjoy with tortillas. Good for kapha and pittas, vatta dosha use in moderation.
1/2 (55 g)green onions.
1 (10 g) jalapeño pepper, seeds and membranes removed
1/4 cup (5 g) fresh cilantro
1 teaspoon fresh lemon juice
1 teaspoon salt (optional)
6 (672 g) ripe Roma tomatoes, quartered (24 quarters), divided use.
Place onion, jalapeño pepper, cilantro, lemon juice, and six of the tomato quarters into the blender. Pulse for a few seconds. Them add the rest of the tomatoes and pulse one more time until the tomatoes are in chunks
