Late fall Canadian Salsa

Late fall Canadian Salsa

One way to use those extra tomatoes from your fall harvest is by doing fresh salsas. Done in 5 minutes this salsa can accompany rice, vegetables or just to enjoy with tortillas. Good for kapha and pittas, vatta dosha use in moderation.

Ingredients

1/2 (55 g)green onions.

1 (10 g) jalapeño pepper, seeds and membranes removed

1/4 cup (5 g) fresh cilantro

1 teaspoon fresh lemon juice

1 teaspoon salt (optional)

6 (672 g) ripe Roma tomatoes, quartered (24 quarters), divided use.

Procedure

Place onion, jalapeño pepper, cilantro, lemon juice, and six of the tomato quarters into the blender. Pulse for a few seconds. Them add the rest of the tomatoes and pulse one more time until the tomatoes are in chunks

Coconut whipping cream

Coconut whipping cream

This vegan cream is excellent for pittas and add a light coat to tarts or fresh fruits.

 

Ingredients

1 can of coconut milk without the guar gum ingredient. Guar gum do not allow the cream to separate from the water. We want the milk to be separate.

1 tsp vanilla

1/3 tsp coconut sugar

 

 

Preparation

Place can in the fridge overnight.

Remove the chilled can from fridge and FLIP it upside down.

Open the can and our the coconut liquid into another bowl.

Scoop the coconut cream into your chilled bowl.

Whip the cream.

Add in a touch of sweetener and vanilla extract and whip it again.
